Churro Cheesecake Donut Cookies Recipe
Ingredients
- For the Dough:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 1 egg
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- For Frying & Coating:
- Vegetable oil (for frying)
- 1/2 cup granulated sugar
- 1 tablespoon cinnamon
Instructions
Step 1: Make the Dough
- In a large bowl, whisk together flour, sugar, salt, baking powder, and cinnamon.
- Add cold cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together milk and egg. Pour into the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for a minute, then cover and refrigerate for 30 minutes.
Step 2: Prepare the Cheesecake Filling
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Transfer to a piping bag or a plastic zip-top bag with the tip cut off.
Step 3: Assemble the Donut Cookies
- Roll out the dough on a floured surface to about 1/4-inch thickness.
- Use a round cookie cutter (or a glass) to cut out circles.
- Pipe a small amount of cheesecake filling onto half of the dough circles.
- Place another dough circle on top, pressing the edges to seal. Use a fork to crimp the edges for a better seal.
Step 4: Fry the Donut Cookies
- Heat oil in a deep pan to 350°F (175°C).
- Fry the stuffed donuts in batches for about 2-3 minutes per side, or until golden brown.
- Remove and drain on a paper towel-lined plate.
