Ingredients

    • 1/2 cup unsalted butter, cold and cubed
    • 1/2 cup milk
    • 1 egg
  • For the Cheesecake Filling:
    • 8 oz cream cheese, softened
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
  • For Frying & Coating:
    • Vegetable oil (for frying)
    • 1/2 cup granulated sugar
    • 1 tablespoon cinnamon

Instructions

Step 1: Make the Dough

  • In a large bowl, whisk together flour, sugar, salt, baking powder, and cinnamon.
  • Add cold cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together milk and egg. Pour into the dry ingredients and mix until a dough forms.
  • Knead the dough on a floured surface for a minute, then cover and refrigerate for 30 minutes.

Step 2: Prepare the Cheesecake Filling

  • In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Transfer to a piping bag or a plastic zip-top bag with the tip cut off.

Step 3: Assemble the Donut Cookies

  • Roll out the dough on a floured surface to about 1/4-inch thickness.
  • Use a round cookie cutter (or a glass) to cut out circles.
  • Pipe a small amount of cheesecake filling onto half of the dough circles.
  • Place another dough circle on top, pressing the edges to seal. Use a fork to crimp the edges for a better seal.

Step 4: Fry the Donut Cookies

  • Heat oil in a deep pan to 350°F (175°C).
  • Fry the stuffed donuts in batches for about 2-3 minutes per side, or until golden brown.
