    • 200 g (7oz) dried spaghetti
    • To Serve:
    • shaved or grated parmesan
    • 1 tbsp chopped fresh parsley

Instructions

Prepare the Meatballs:

In a large bowl, combine 500 grams of minced beef, a large chopped onion, and an egg.

Add 3 tablespoons of grated Parmesan cheese, 3 tablespoons of Panko bread crumbs, and 1/4 teaspoon each of salt and black pepper.

Mix everything together with your hands until thoroughly combined.

Form the mixture into 16 walnut-sized meatballs. Place them on a tray lined with baking parchment.

Cook the Meatballs:

Heat a large frying pan or a cast-iron pan over medium to high heat.

Add 1 tablespoon of oil and 1 tablespoon of unsalted butter to the pan.

Once the butter has melted, add the meatballs.

Cook the meatballs for about 5 to 6 minutes, turning them 2 to 3 times until they are golden brown all over.

Add Vegetables and Flavorings:

Move the meatballs to one side of the pan.

In the empty space, add the finely chopped onion, 2 finely chopped celery sticks, and 2 cloves of minced garlic.

Season with 1/4 teaspoon each of salt and black pepper.

Cook for about 3 to 4 minutes until the onions start to soften.

Prepare the Sauce:

Add a can of finely chopped tomatoes, 2 tablespoons of tomato puree, 1 teaspoon of dried thyme, 1 teaspoon of light brown sugar, and 1 crumbled beef stock cube to the pan.

Pour over 600 ml (2.5 cups) of just-boiled water.

Stir everything together and bring to a boil.

Cook the Spaghetti:

Make space in the pan and add 200 grams (7 ounces) of dried spaghetti.

Ensure the pasta is fully submerged in the liquid.

Cover the pan with a lid and cook for 10 to 12 minutes, stirring occasionally.

Add an extra splash of water if the mixture looks dry.

Serve:

Once the spaghetti is perfectly cooked, divide it between four bowls and top with the meatballs.

Garnish with additional Parmesan cheese and fresh parsley.

Notes:

Alternative Meat Options:

You can substitute the minced beef with minced chicken, turkey, or pork. The cooking time may vary slightly depending on the type of meat used.

Make-Ahead Tips:

Prepare the meatballs and sauce ahead of time and store them in the refrigerator. When ready to serve, reheat the sauce and cook the spaghetti as per the instructions.

Freezing Leftovers:

Store any leftovers in an airtight container and freeze for up to 3 months. To reheat, thaw in the refrigerator overnight and warm up on the stove or microwave.

Using Fresh Tomatoes:

You can use fresh tomatoes instead of canned. You may need to add a bit more water to achieve the desired consistency.
